Anchovy (‘Anchoas del Cantábrico’)


This is perhaps the freshest fish you can get hold of from the Basque fishmongers between March and May.

Rather small measuring around 15 cm of length, it is a very delicate fish. With shiny eyes and skin, its colors usually range from blueish to greyish tones. It is very much used in the Basque cuisine in various ways such as fried, preserved, as part of ‘pintxos’, etc.
