Mushrooms or ‘perretxiko’

The Basque Country is also a place for mycology, especially in autumn when the most precious varieties for cooking grow.

In the mountains of Natural Parks like Gorbea, Izki, Peñas de Aia or Aralar scores of varieties of mushrooms grow, among which we could list the likes of ‘xixas’, ‘gibelurdinas’, dark cep, truffle or milk-cap. All these kinds of mushroom are highly regarded in markets and kitchens due to their aroma and taste.
