Potato from Álava

The climate, soil and a traditional cultivation system have made this type of potato to be considered a product of high quality.

The potato is sowed by the end of April or beginning of May and needs to be heavily watered until it is harvested between September and February. Thanks mainly to the modernization and professionalization of its cultivation system, the potato has become an essential part of the local cuisine.
