Red sea bream

This is one of the most coveted fish in Basque cuisine and can be fished in the Bay of Biscay and the Atlantic Ocean.

It is mainly fished during December and January. It is a white fish with a fair content of fat, of oval and rather sturdy shape. It can weigh between a kilo and a kilo and a half and its measure varies from the 10-15 cm that a young specimen can display, to the 35 cm of an adult. It is mainly cooked on the grill following the style of Orio⎯a coastal town⎯, well-known worldwide.
